Looks aren't everything...
You can always put something in a pretty package, but sometimes it's just that. I got all confident because I've been on my food A game! The salads have been just right and really satisfying. And if you know me, food is important to me. Good food. Good quality. Good taste. And I have to feel nourished by what I eat. I am also busy solo parenting two kids while my husband works away and I am not going to do some elaborate grocery shopping for one recipe. I've got my staples but if I am short on time, I get "creative". Tonight, I was thinking I would stuff some mini peppers with a ketogenic friendly concoction. Half an avocado, can of albacore tuna, cream cheese, salt, fresh thyme (because it was left over from making a roasted chicken a few days ago), fresh squeeze of lemon, all smashed together on top a piece of Ezekiel toast that was drizzled with olive oil. I couldn't find the red pepper flakes and so I dashed on some moroccan seasoning and then sliced the peppers on top. My instinct was that it wasn't the best call, but surely it would all work.
It looks great...in my opinion. It has all the good stuff...but it was just ho-hum. I topped it with Primal Kitchen's Green Goddess Dressing and it was still fine, but didn't pack the flavor punch it has the potential to deliver. It was satisfying and didn't require heating up more than a piece of toast and asparagus.
How would you alter this to make it amazing?
